As for the wine itself, the grapes are handpicked at night and undergo fermentation using native yeast and 100% whole clusters in an open-top stainless steel fermenter. Gentle extraction is achieved through daily pump-overs and punch-downs. The wine is then aged for 10 months in neutral French oak before being bottled without fining or filtration.
