The grapes are meticulously handpicked, carefully sorted, and completely de-stemmed before being fermented with native yeast in a sealed stainless steel tank, embracing a semi-carbonic approach. This wine underwent just 3-4 pump overs for a delicate extraction, resulting in a smooth, earthy texture. It boasts aromas of bacon fat and dark fruits, accented by subtle spices and floral notes. While it isn't heavy, it delivers an inky, vibrant richness. 6 months in neutral French oak, unfined and unfiltered.
