This bottling of 100% hand-harvested Sauvignon Blanc is made up of fruit from the "Lara" and "Camposanto". The grapes experience soft pressing of 50% of whole clusters immediately after harvesting. The remaining fruit is de-stemmed, and left on the skins for 24 hours of cold maceration before pressing. Fermentation occurs in stainless steel tanks at controlled temperature. The wine is then aged on the noble lees in stainless steel for 6 months with frequent batonnages.
